You'll never make meatloaf the same after making these meatloaf cupcakes. They're a twist on the classic meatloaf that will be a huge hit and make even people who aren't crazy about meatloaf ask you to make them often.
Ingredients
- 1 lb. lean ground beef
- 1/2 c. bread crumbs
- 1 egg, beaten
- 1/4 c. ketchup
- 1/4 c. milk
- 1/2 t. garlic powder
- 1/2 t. onion powder
- salt and pepper, to taste
- 2 c. cooked creamy, whipped mashed potatoes
- chopped chives, for garnish
Steps
- Preheat oven to 375 degrees F. Lightly spray a standard muffin pan with non-stick spray for an easier release of the meatloaf cupcakes.
- In a bowl, mix together the ground beef, bread crumbs, egg, ketchup, milk, garlic powder, onion powder, salt, and pepper.
- Press the meat mixture into each well of the muffin pan, filling each cup to the top.
