You'll never make meatloaf the same after making these meatloaf cupcakes. They're a twist on the classic meatloaf that will be a huge hit and make even people who aren't crazy about meatloaf ask you to make them often.

Ingredients

1 lb. lean ground beef
1/2 c. bread crumbs
1 egg, beaten
1/4 c. ketchup
1/4 c. milk
1/2 t. garlic powder
1/2 t. onion powder
salt and pepper, to taste
2 c. cooked creamy, whipped mashed potatoes
chopped chives, for garnish

Preheat oven to 375 degrees F. Lightly spray a standard muffin pan with non-stick spray for an easier release of the meatloaf cupcakes.

In a bowl, mix together the ground beef, bread crumbs, egg, ketchup, milk, garlic powder, onion powder, salt, and pepper.
Press the meat mixture into each well of the muffin pan, filling each cup to the top.

Bake for about 20-25 minutes, or until the meatloaves are cooked through.

While the meatloaves are baking, whip the mashed potatoes until light and fluffy.

When the meatloaves are done, let them cool slightly; remove from the muffin tins.

Pipe the whipped potatoes on top of each meatloaf cupcake using a piping bag with a star tip.

Serve warm, garnished with chopped chives.
