Ingredients
12 oz. rotini, bowtie or penne pasta
2 T. butter
3 c. corn, fresh, frozen, or canned (drain the canned corn)
1/3 c. mayonnaise
1/3 c. sour cream
1/2 t. garlic powder
1/2 t. chili powder, plus more for garnish
freshly squeezed juice of 1 lime
1/2 t. salt
1/4 t. black pepper
1/2 c. crumbled Cotija or Feta cheese
1/4 c. chopped fresh cilantro
jalapeño slices or hot sauce for optional heat
lime wedges, for optional garnish

Cook pasta according to package directions until al dente; drain; set aside.
In a large skillet over medium-high heat, melt butter; add corn; cook for 5–7 minutes until lightly charred and golden,stirring occasionally.
In a large bowl, combine mayonnaise, sour cream, garlic and chili powders, lime juice, salt, and pepper; mix.
Add the pasta and corn to the bowl; toss until well coated. Fold in the cheese and chopped cilantro.
Serve warm or chilled, garnished with more chili powder, more cheese, and lime wedges, if desired.
