Ingredients
- 12 oz. rotini, bowtie or penne pasta
- 2 T. butter
- 3 c. corn, fresh, frozen, or canned (drain the canned corn)
- 1/3 c. mayonnaise
- 1/3 c. sour cream
- 1/2 t. garlic powder
- 1/2 t. chili powder, plus more for garnish
- freshly squeezed juice of 1 lime
- 1/2 t. salt
- 1/4 t. black pepper
- 1/2 c. crumbled Cotija or Feta cheese
- 1/4 c. chopped fresh cilantro
- jalapeño slices or hot sauce for optional heat
- lime wedges, for optional garnish
Steps
- Cook pasta according to package directions until al dente; drain; set aside.
- In a large skillet over medium-high heat, melt butter; add corn; cook for 5–7 minutes until lightly charred and golden,stirring occasionally.
- In a large bowl, combine mayonnaise, sour cream, garlic and chili powders, lime juice, salt, and pepper; mix.
