Everyone will enjoy this delicious and savory pie. It's the perfect weeknight meal in a pie shell with layers of tomatoes, crisp bacon, sweet onionin a creamy cheese mixture and topped with a cruncy, crushed cracker topping.

Ingredients

9" pie shell
5 large tomatoes, peeled and sliced
4 bacon slices, cooked and chopped
1 sweet onion, chopped
1 t. salt
1/2 t. pepper
2 T. milk
1/2 c. mayonnaise
1 1/2 c. sharp Cheddar cheese, shredded
1/4 c. Ritz crackers, crushed
2 t. butter, melted
2 green onions, sliced

Preheat the oven to 350 degrees F.

Filling: In a large bowl, combine the tomatoes, bacon, and sweet onion; season with salt and pepper; stir.

Cheese Mixture: In another bowl, whisk together the milk and mayonnaise until smooth; stir in the cheese.

Assembly: Layer the tomato mixture into the pie shell. Pour the cheese mixture over the top, spreading out evenly.

Crunchy Topping: In a small bowl, mix the crushed crackers with melted butter; sprinkle over the pie.

Bake for 30-35 minutes, or until the filling is bubbly and the topping is golden brown.

Remove from the oven; let cool for a few minutes.

Serve garnished with sliced green onions.
