Description
This is a simple yet very delicious pasta dish. It's great for busy weeknight because it can be ready in about 20 minutes.
Ingredients
- Kosher salt and freshly ground black pepper
- 1 lb. dried capellini pasta
- 2 sticks unsalted butter (16 T.), or less
- zest and freshly squeezed juice of 2 large lemons
- reserved pasta cooking water
- 1 sliced lemon and more lemon zest, for garnish
Steps
- Add 2 T. salt to a large pot of boiling water; add the capellini; cook 3 to 4 minutes, until just al dente.
- Meanwhile, heat a large saute pan; add the butter; heat until the butter is melted. Add the lemon zest and the juice of the 2 lemons. Add 2 t. salt and 1 t. black pepper; swirl the pan to combine.
- As soon as the pasta has finished cooking, use tongs to lift all of the pasta out of the water, allowing most but not all of the water to drain back into the pot. Cook 1 minute, adding some of the pasta cooking water to the sauce, just enough to keep the pasta moist.
