Description
These shrimp bowls are perfect for busy days when you want a delicious meal but time is limited and can be ready in about 30 minutes. Each mouthful is bursting with fresh ingredients, a mix of sweet and spicy that will excite the senses.
Ingredients
Shrimp:
olive oil, for grilling
1 lb. large shrimp, peeled and deveined (if using frozen shrimp, thaw first)
Bowls:
1–2 ripe avocados, peeled, pitted and sliced
1 large ripe mango, diced
2 c. cooked rice or quinoa
chopped fresh cilantro, for garnish
lime wedges, for serving
Lime-Chili Sauce:
1/4 c. plain Greek yogurt
1 T. mayonnaise
1 t. chili powder
zest and juice of 1 lime
1 t. honey or agave
salt and pepper, to taste
Mango Salsa:
1 diced mango
1/4 c. diced red onion
1 small jalapeño, finely chopped, optional
juice of 1 lime
1–2 T. chopped fresh cilantro
salt and pepper, to taste

Mango Salsa: combine the diced mango, red onion, jalapeño, lime juice, cilantro, and a pinch of salt in a bowl; mix well; refrigerate.
Lime-Chili Sauce: whisk the Greek yogurt, mayonnaise, chili powder, lime zest, lime juice, honey, salt, and pepper together. Season to taste; set aside.
Pat the shrimp dry; season with chili powder, garlic powder, salt, and pepper.
Heat a grill pan or skillet over medium-high heat with a drizzle of olive oil. Cook the shrimp for 2-3 minutes per side until pink and slightly charred.
Bowl Assembly: Add cooked rice or quinoa to each bowl; top with grilled shrimp, sliced avocado, and mango salsa. Drizzle lime-chili sauce generously over the tops.
Garnish with chopped cilantro and lime wedges.
Serve immediately.
