Description

This casserole is amazingly delicious and easy to make with simple ingredients like ground beef, potatoes, vegetables and cheese. It's economical to prepare and is perfect for days when you are short on time to prepare a satisfying meal.

Ingredients

1 lb. ground beef (or ground turkey)
1 onion, chopped
2 cloves garlic, minced
3 medium potatoes, thinly sliced
2 c. sliced carrots
15 oz. can green beans, drained
10.5 oz. can cream of mushroom soup
1/2 c. milk
salt and black pepper
1 t. Italian seasoning
1 c. shredded Cheddar cheese, or favorite

Preheat oven to 375 degrees F. Grease a 9x13" baking or casserole dish.

In a large skillet over medium heat, cook the ground beef, onion and garlic until browned and throughly cooked. Discard excess grease.

In a large bowl, combine the meat mixture, potatoes, carrots, green beans, cream of mushroom soup, and milk; season with salt, pepper, and Italian seasoning. Mix well.

Transfer mixture to the prepared baking dish, spreading mixture out evenly.

Cover tightly with aluminum foil. Bake 45 minutes. Remove the aluminum foil, sprinkle cheese over the top, and bake uncovered for another 15 minutes, or until cheese is bubbly and vegetables are fork-tender.

Let cool slightly before serving.

Serve.

6 servings.

Tips:
* For extra creaminess, stir in 1/2 c. sour cream or softened cream cheese right before baking.

Swap fresh vegetable for frozen mixed veggies for a shortcut. There's no need to thaw the veggies first.

Add a pinch of smoked paprika or Worcestershire sauce to the meat for extra depth of flavor.
