Description
These flavorful chicken meatballs are deliciously juicy. They're served with a homemade Tzatziki sauce made from Greek yogurt, fresh cucumber, dill, lemon juice, and garlic, making the entire dish fresh, delicious, and healthy.
Ingredients
Meatballs:
1 lb. ground chicken
1/4 c. whole wheat panko crumbs, or favorite bread crumbs
1/4 c. grated onion
2 cloves garlic, minced
3 T. fresh parsley, finely chopped
zest of 1/2 lemon
1 t. dried oregano
1/2 t. ground coriander
1/2 t. cumin
pinch of salt and black pepper
1 large egg
2 oz. feta cheese, crumbled
Tzatziki Sauce:
1 1/2 c. plain full-fat Greek yogurt
1 c. grated cucumber
1 1/2 T. chopped fresh dill
2 cloves garlic, minced
1/2 medium lemon, juiced (use the lemon from the meatball recipe)
1/2 t. salt
1/2 t. black pepper
drizzle extra virgin olive oil, for garnish

Meatballs: Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil; spray with cooking spray.
In a large bowl, combine ground chicken, panko crumbs, grated onion, garlic, parsley, lemon zest, oregano, coriander, cumin, salt, black pepper, egg, and feta; use clean hands to mix well.
Form the mixture into 1 T. sized meatballs; place on the prepared baking sheet.
Bake 12-15 minutes until golden brown.
While the meatballs are baking, prepare the tzatziki sauce: Add yogurt, cucumber, and dill to a bowl; mix until well-combined. Stir in garlic, lemon juice, salt and pepper.
Garnish with more chopped dill and a drizzle of extra virgin olive oil.
Serve the meatballs while hot with the tzatziki sauce.
