These flavorful chicken meatballs are deliciously juicy. They're served with a homemade Tzatziki sauce made from Greek yogurt, fresh cucumber, dill, lemon juice, and garlic, making the entire dish fresh, delicious, and healthy.
Ingredients
- Meatballs:
- 1 lb. ground chicken
- 1/4 c. whole wheat panko crumbs, or favorite bread crumbs
- 1/4 c. grated onion
- 2 cloves garlic, minced
- 3 T. fresh parsley, finely chopped
- zest of 1/2 lemon
- 1 t. dried oregano
- 1/2 t. ground coriander
- 1/2 t. cumin
- pinch of salt and black pepper
- 1 large egg
- 2 oz. feta cheese, crumbled
- Tzatziki Sauce:
- 1 1/2 c. plain full-fat Greek yogurt
- 1 c. grated cucumber
- 1 1/2 T. chopped fresh dill
- 2 cloves garlic, minced
- 1/2 medium lemon, juiced (use the lemon from the meatball recipe)
- 1/2 t. salt
- 1/2 t. black pepper
- drizzle extra virgin olive oil, for garnish
Steps
- Meatballs: Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil; spray with cooking spray.
- In a large bowl, combine ground chicken, panko crumbs, grated onion, garlic, parsley, lemon zest, oregano, coriander, cumin, salt, black pepper, egg, and feta; use clean hands to mix well.
- Form the mixture into 1 T. sized meatballs; place on the prepared baking sheet.
