Description
This pasta is so delicious, you'll add it to your meal rotation. It starts with thin spaghetti, fresh vegetables and aromatic herbs and feta cheese. It's a great meal to make for meatless Mondays or any day of the week.
Ingredients
- 6 oz. thin spaghetti or angel hair pasta, uncooked
- 1 t. dried oregano
- 1 garlic clove, minced
- 2 t. olive oil
- 3 c. chopped seeded plum tomatoes
- 1/2 c. sliced green onions
- 1/4 c. minced fresh parsley, divided
- 2 T. minced fresh basil
- 2 T. lemon juice
- 1 c. crumbled feta cheese, divided
- 1/2 t. salt
- 1/8 t. black pepper
Steps
- Cook pasta according to package directions.
- While pasta is cooking, saute oregano and garlic in oil for 1 minute or until garlic is tender in a non-stick skillet. Add the tomatoes, green onions, 2 T. parsley, basil and lemon juice; cook and stir for 2 minutes or until heated through. Remove from the heat.
- Drain spaghetti; add to the skillet. Add 3/4 c. feta cheese, salt and pepper; toss.
