Description
You'll add this amazing and satisfying chicken dish to your meal rotation after making it the first time. It's comfort food at its best with melted cheese, juicy, tender chicken and caramelized onions.
Ingredients
2 T. olive oil
4 T. butter
2 yellow or white onions, peeled, cut into thin half moon shapes
1 t. granulated sugar
1/2 t. kosher salt
2 - 3 sprigs fresh thyme, leaves removed, plus more for optional garnish (or 1/2 t. dried)
1 bay leaf
1 - 2 cloves garlic, minced
4 - 6 oz. boneless, skinless chicken breasts
1/2 t. black pepper
1 T. all-purpose flour
1/2 c. dry white wine, like Sauvignon Blanc, optional
1 c. reduced sodium beef stock
1/2 lb. Provolone cheese, grated
1/4 lb. Swiss cheese, grated

Heat olive oil and butter together in a 10" oven-proof skillet over medium heat. Add onions; sauté until soft, about 10 minutes.
Add sugar, salt, thyme, and bay leaf to the onions; cook until onions are caramelized, about 15-20 minutes, stirring occasionally. Add a splash of wine or beef broth if onions darken too quickly.
In the last minutes of caramelizing, add garlic; cook 2 minutes; keep an eye on it to avoid burning.
While onions cook, pat chicken dry with paper towels; pound to 1/2 to 3/4" thickness. Season with pepper.
Remove onions from skillet; set aside. Increase heat to medium-high; add chicken. Sear until browned, 3-4 minutes per side.
Preheat oven to 350 degrees F.
Remove chicken; set aside. Add onions back to the skillet. Sprinkle with flour; cook 1-2 minutes. Add wine; simmer 2-3 minutes. Add beef broth; simmer until thickened.
Return chicken to the skillet; top with cheese.
Bake 20-25 minutes until the cheese melts and chicken reaches 165 degrees F. Discard the bay leaf.
Serve, with the onions and sauce, garnished with fresh thyme.
