Ingredients

  • 1/2 lb. spaghetti or favorite thin pasta
  • 1 large egg plus 1 large egg yolk
  • 2 T. low-fat milk
  • 1/4 c. grated Pecorino Romano or Parmesan cheese, divided
  • 2 slices turkey bacon, diced
  • 1/4 c. finely diced red onion
  • 2 cloves garlic, minced
  • salt and freshly ground black pepper, to taste

Steps

  1. Bring a large pot of water to a boil; add 1 T. salt per gallon of water; stir in pasta.
  2. Cook, stirring occasionally, until al dente, following package directions for recommended time.
  3. Reserve 1/4 c. pasta cooking water; drain. Return drained pasta to the pot; cover to keep warm.
