Ingredients
1/2 lb. spaghetti or favorite thin pasta
1 large egg plus 1 large egg yolk
2 T. low-fat milk
1/4 c. grated Pecorino Romano or Parmesan cheese, divided
2 slices turkey bacon, diced
1/4 c. finely diced red onion
2 cloves garlic, minced
salt and freshly ground black pepper, to taste

Bring a large pot of water to a boil; add 1 T. salt per gallon of water; stir in pasta.
Cook, stirring occasionally, until al dente, following package directions for recommended time.
Reserve 1/4 c. pasta cooking water; drain. Return drained pasta to the pot; cover to keep warm.
Beat the egg, egg yolk, and milk in a small bowl along with half of the cheese; set aside.
Place a large skillet over medium heat; add the turkey bacon; cook until crispy, about 3 minutes. Transfer the bacon to a paper towel lined plate.
If the skillet is dry and has fat drippings from the bacon, add 1 T. extra virgin olive oil. Add the onion; cook until just softened, about 2 minutes. Add the garlic; cook until fragrant, 1 more minute.
Stir in the drained pasta to the skillet along with half of the reserved pasta water. Add the egg mixture, tossing and stirring constantly to combine for 1 minute.
Remove from heat. Stir in the remaining cheese, bacon, and more reserved pasta water if pasta seems dry.
Serve, garnished with freshly ground black pepper.
