Description

This super quick and simple pasta dish is made in less than 30 minutes with just 7 ingredients. It's a traditional Sicilian pasta that's satisfying, delicious, rich and creamy.

Ingredients

12 oz. short cut pasta, like penne, bowtie, rotini, rigatoni
3/4 c. shelled pistachios, unsalted (cut back on salt if using salted)
1/4-1/2 c. onion, finely chopped, optional
2 T. olive oil
1 c. heavy cream
1/2 c. milk
1 t. salt
1/2 t. crushed red pepper flakes
1/2 t. black pepper

Add the pistachios to a food processor; grind to a coarse texture or chop by hand for bigger pieces.

Bring a large pot of water to a boil; cook pasta according to the package directions.

Meanwhile, in a large skillet, heat olive oil over medium-high heat; add the onions; sauté for about 5 minutes until soft.

Add about 3/4 of the ground pistachios to the pan and stir to coat in the oil. Add additional oil if necessary so the pistachios are well coated.

Pour in the heavy cream and milk; bring to a simmer; cook for about 10 minutes, stirring occasionally. The longer this simmers, the more the pistachios infuse in the cream and flavor the sauce, so don't skip or rush this step.

Season with the crushed red pepper flakes, salt and pepper. Toss the cooked pasta in the sauce.

Serve with Parmesan cheese and the remaining pistachios.
