Pistachio Cream Pasta

Description

This super quick and simple pasta dish is made in less than 30 minutes with just 7 ingredients. It's a traditional Sicilian pasta that's satisfying, delicious, rich and creamy.

Ingredients

  • 12 oz. short cut pasta, like penne, bowtie, rotini, rigatoni
  • 3/4 c. shelled pistachios, unsalted (cut back on salt if using salted)
  • 1/4-1/2 c. onion, finely chopped, optional
  • 2 T. olive oil
  • 1 c. heavy cream
  • 1/2 c. milk
  • 1 t. salt
  • 1/2 t. crushed red pepper flakes
  • 1/2 t. black pepper

Steps

  1. Add the pistachios to a food processor; grind to a coarse texture or chop by hand for bigger pieces.
  2. Bring a large pot of water to a boil; cook pasta according to the package directions.
  3. Meanwhile, in a large skillet, heat olive oil over medium-high heat; add the onions; sauté for about 5 minutes until soft.
