Ingredients

35 oz. can San Marzano tomatoes, whole or crushed
1/4 c. olive oil
1/2 onion, diced
2-3 cloves garlic, minced
1/2 t. oregano
4-6 leaves fresh basil leaves, torn
salt and black pepper, to taste

If using whole tomatoes, hand crush them or lightly blend for a smoother texture; set aside.

Heat olive oil in a large skillet over medium heat. Saute the onion until translucent, 3-4 minutes. Stir in the garlic; saute until lightly golden, about 2 minutes.

Add the crushed tomatoes with its juices; bring to a boil. Lower the heat; simmer 45 minutes.

Season with oregano, salt and pepper. Stir in the basil leaves; cook 1 minute.

Serve over your favorite pasta.

Makes 2 cups.
