Description
This easy to prepare corn chowder is ready in 35 minutes with just a few simple ingredients. Its so flavorful and luscious, it tastes like it's been cooked all day. It's perfect for a refreshing summertime meal or a comforting winter dish.
Ingredients
- 1 large onion, chopped
- 1/2 c. butter, cubed
- 2 1/2 c. water
- 2 - 14 3/4 oz. cans cream-style corn
- 4 medium potatoes, peeled and cut into 1/2" cubes
- 2 c. milk
- 1 1/2 t. salt
- 3/4 t. black pepper
- fresh parsley, minced
Steps
- In a Dutch oven, saute onion in butter until tender. Add the water, corn and potatoes; bring to a boil. Reduce heat; cover; simmer 16-20 minutes or until potatoes are tender. Reduce heat to low. Stir in the milk, salt and black pepper. Cook for 5-10 minutes or until heated through, stirring occasionally.
- Serve, garnished with parsley.
- 8 servings.
