Description
Gilmore Girls fans have requested this relatively unknown casserole that Richard Gilmore served his family. The family seemed to love it as much as Richard did when he was growing up. It's worth a try.
Ingredients
1/2 c. red bell pepper, diced
1/2 c. red onion, diced
1/2 c. orange bell pepper, diced
1/2 c. butternut squash, diced
1/2 c. rainbow carrots, peeled diced
1/2 c. yellow bell pepper, diced
1/2 c. yellow squash, diced
1/2 c. green bell pepper, diced
1/2 c. zucchini, diced
1/2 c. eggplant, diced
3 cloves garlic, minced
1/2 t. salt
1/2 t. pepper
1/2 t. Italian seasoning
1/4 t. crushed red pepper flakes
28 oz. canned crushed tomatoes
14 oz. can cream of mushroom soup
8 oz. cream cheese, softened
1 lb. small tubular rainbow pasta (elbow or corkscrew), cooked
1 c. shredded Cheddar cheese

Preheat the oven to 400 degrees F.
Cook the pasta according to package directions.
Add a drizzle of olive oil to a large stockpot; place over medium heat.
Add all vegetables and garlic to the pot; sauté for about 7-8 minutes or until the vegetables are soft.
Add the salt, pepper, Italian seasoning, and red pepper flakes to the vegetables; stir to combine for 2 minutes.
Add the tomatoes, mushroom soup, and cream cheese; stir to fully combine; simmer for about 3 minutes or until the cream cheese has melted.
Remove from heat; stir in the pasta.
Pour the mixture into a 9 x 13" baking dish. Sprinkle the Cheddar cheese over the top.
Cover with aluminum foil. Bake for 25 minutes; remove the foil; cover for another 5 minutes or until the cheese is bubbly.
Serve.
