Description
Richard Gillmore from The Gilmore Girls loved this soup that his mother used to make him. It's an old fashioned, delicious soup with layers of flavor and no turtles!
Ingredients
1 1/2 lb. ground beef*
3 oz. ginger snaps
2 c. very hot water
1/2 onion, finely chopped or grated
1 c. ketchup
1/4 c. Worcestershire sauce
1/2 t. ground black pepper
5 or 6 thin slices of lemon (seeds discarded)
3 hard boiled eggs, finely chopped
1 T. sherry wine
kosher salt

Heat a dry (no oil) 4 quart soup pot or Dutch oven over medium heat. Add the ground beef; brown, chopping up the clumps as you go, until the meat is fine, not clumpy.
While the meat is browning, place the ginger snaps in a heat-proof bowl; pour 2 cups very hot water over them; set aside to soak.
When the meat has cooked, drain any excess fat. If there’s a pool of orange fat in the pot, skim some off.
Add the onions; if using grated onions, grate them directly into the pot; stir.
Pour in the ketchup and Worcestershire sauce; season with pepper. Pour in the ginger snaps with the liquid; stir well. The mixture should be thick at this point, and look like sloppy joe sauce.
Add water, 1 c. at a time, until the soup has thinned, which will take 4 to 6 c. water. It should not be watery, but more soup like than sloppy-joe-like, some of the liquid will have cooked off.
Bring the soup to a gentle boil; reduce heat to low-medium to maintain a simmer. Stir once to let everything settle.
Lay the seedless lemon slices over the top of the soup.
Partially cover with a lid; let simmer for 1 to 2 hours, stirring every 20 minutes or so to prevent scorching.
Remove from the heat. Discard the lemon slices.
Stir in the sherry and hard boiled eggs.
Season to taste with salt and pepper. If the flavor needs brightening or is too sweet from the ginger snaps, add 1-2 t. apple cider vinegar or lemon juice.
Serve.
4 servings.
* Half of the ground beef could be replaced with ground turkey, if desired.
