Description
A light, cool summer side dish or meal for those times when you don't feel like cooking.
Ingredients
- 8 oz. small shell pasta, cooked according to directions
- 1/2 large avocado, peeled, pit removed, cut into 1/2" pieces
- 1/4 - 1/2 cu. small grape tomatoes
- 8 slices bacon, crisply cooked, chopped into small pieces
- 1/2 large avocado, peeled, pit removed, mashed with a fork
- 1/3 cu. ranch dip/dressing of your choice
Steps
- Mash the avocado in medium size mixing bowl, then stir in the ranch dip. Add the cooked pasta, stir well to coat. Add the remaining ingredients, toss to combine. Chill until ready to serve.
