Why not combine your favorite foods with this simple dish? Mexican style hot dogs, with onions, green chile peppers, 2 different cheeses and tortillas! Yum!
1 tbl. vegetable oil
2 cu. green chile peppers (like poblano), sliced and with seeds
2 medium onions, sliced
1 garlic clove, chopped
16 corn tortillas
1 cu. shredded Monterey Jack cheese
1 cu. shredded sharp cheddar cheese
2 tbl. unsalted butter
8 hot dogs
Sour cream, for serving
Prepared pico de gallo or fresh salsa, for serving
Preheat oven to 200 degrees.
Heat oil in a large skillet over medium heat. Add the peppers and onions, sauteing until they're soft and start to brown, about 10 minutes. Put in the garlic and cook for 2 more minutes.
Divide the onion-pepper mixture among 8 tortillas. Sprinkle 2 tbl. Monterey Jack cheese and 2 tbl. cheddar cheese evenly over each of the 8 tortillas. Top each with another tortilla to make a sandwich.
Heat the butter in a skillet over medium heat. Add each quesadilla and cook, turning once, until the cheese is melted. Place the cooked quesadillas on a baking sheet and put them in the oven to keep warm while you cook the remaining quesadillas.
Cook the hot dogs according to your preferred method. Wrap a quesadilla around each hot dog. Serve with sour cream and pico de gallo or salsa.
