Grilled Pita Pizzas

Description

These pizzas can be served as an appetizer or as the main dish. Serve them with a salad and you have the whole meal without much fuss.

Ingredients

1 package (14 ounces) pita pocket bread
1/2 cup sun-dried tomato spread
1 can (2.25 ounces) sliced ripe olives, drained
1 package (8 ounces) shredded Italian-style cheese blend
1 package (.75 ounces) fresh basil, finely shredded (about 1/2 cup)

Preheat grill to medium.

Spread about 1 1/2 tablespoons sun-dried tomato spread over each pita. Top with olives and cheese. Place on grill over medium coals. Cover and grill until cheese is melted and pita is toasted, about 3 minutes. Top with shredded basil. Cut into wedges; serve warm.
