Description
This absolutely wonderful chicken wrapped in bacon can either be an appetizer or the main dish. You decide!
Ingredients
- 1 pound boneless chicken breasts
- 20 thin bacon slices
- 3 tbl. honey
- 2 tsp. coarse mustard
- fresh lemon juice, about 1 tbl.
- salt, to taste-optional
Steps
- Preheat grill to 425 degrees.
- Cut the chicken breasts or fillets, in thin strips. Not too thin, the bacon has to brown and if the chicken is too thin it’ll get dry before the bacon gets crispy.
- In a bowl, combine 3 tbl. honey with 2 tsp. coarse mustard. Squeeze in about 1 tb. lemon juice. Wrap the bacon around the chicken strips. Place them in a roasting tray lined with foil or on a cookie sheet.
