Roasted Garlic and Bacon Guacamole

Description

Change up your typical guacamole by using roasted garlic and bacon. If you need a vegetarian version, omit the bacon. It will still be delicious and everyone will enjoy it and probably ask you for the recipe.

Ingredients

1 whole head of garlic
1 t. olive oil
3 strips bacon
2 T. sweet yellow onion, minced
3 avocados, pits removed
1/4 t. cayenne pepper
1 T. fresh lime juice, from about 1 large lime
1/4 c. fresh cilantro, chopped
1/8 - 1/4 t. kosher salt, to taste

Preheat oven to 450 degrees.

Slice the top off of the garlic head, then place it in the middle of a piece of aluminum foil. Drizzle with oil then wrap the foil around it. Roast for about 45 - 60 minutes, until the garlic is soft and squishy when you squeeze it gently while still in the foil. Remove from the oven, unwrap and cool.

While garlic is roasting, cook the bacon in a skillet. When it is almost done, add the onion, then cook over medium heat for about 2-3 minutes, until it is tender. Chop or crumble the bacon, as preferred. Remove onion and bacon from the heat, set aside. If there is a lot of bacon grease, you may want to drain it.

Place the avocados in a bowl with the roasted garlic cloves which should easily squeeze out of the head of garlic, and mash the mixture with a fork. Add the lime juice and cayenne pepper then mash the mixture until it is the consistency you like.

Stir in the onion and bacon. Taste and add salt mixture as needed. Store in an airtight container.

Serve with tortilla chips.
