A delicious, easy way to make pulled pork in a crock pot!
2 1/2 lb. boneless pork shoulder
1 tbl. Jamaican jerk seasoning
1/4 tsp. dried thyme leaves
1/2 cup chopped onion
1 cup cola
2 cups BBQ sauce

If pork has netting or is tied, don't remove it. Spray crock pot with cooking spray. Rub jerk seasoning and sprinkle thyme on both sides of meat and place it in the crock pot. Sprinkle the chopped onion on top and pour cola over the pork. Cover and cook on low 8-10 hours. Remove meat from crock and removed netting. Shred with two forks. Remove juices from cooker and reserve. Return the meat to the crock, stir in BBQ sauce and a little more than 1/2 cup of the reserved juices. Increase crock heat to high, cover and cook 30-45 minutes till heated through. Serve on buns. **You can heat the remaining juices in a 2 quart pot till boiling. Serve with sandwiches with dipping, if you would like.
