Description
Add shrimp and spinach to your fettuccine, cut down on salt, oil and butter to make a healthy version of this wonderful dish.
Ingredients
- 8 oz. fettuccine, or pasta of choice, uncooked
- 2 T. butter
- 1 T. extra-virgin olive oil
- 2 garlic cloves, thinly sliced
- 10 oz. medium shrimp, peeled, deveined
- 3/8 t. salt
- 1/4 t. black pepper, freshly ground
- 6 oz. baby spinach, fresh
- 1 1/4 oz. Parmesan cheese, shaved
Steps
- Cook pasta according to package directions, do not add salt or oil.
- Melt butter and oil in a large skillet over medium heat. Add garlic to pan and cook 1 minute.
- Remove garlic from pan and place in a small bowl. Increase the heat to medium-high. Add shrimp, salt, and pepper to pan; cook 4 minutes or until shrimp are done, stirring occasionally.
