Like a BLT? How about fried green tomatoes? Well, enjoy 2 favorite dishes in one, fried green tomatoes and a BLT sandwich all in one. Yum! Yum!
3 green tomatoes, sliced 1/4 inch thick
2 eggs
1/2 c. whole milk
3 c. oil, your choice of type
1/2 c. flour
3 T. cornmeal
2 t. salt
1 1/2 t.pepper, freshly ground
lettuce
4 slices bread, your favorite type
4 slices bacon, crisp or fried the way you like it
mayonnaise
salt and pepper
Preheat oven to 225 degrees. Place a wire rack on a sheet pan in the oven.
Pour oil into a small pan on the stovetop. Heat it to 365 degrees.
Crack eggs into a small bowl, then pour in the milk and whisk together. In another small bowl, combine the flour, cornmeal, salt, and pepper.
Dredge the slices of green tomatoes one at a time ithrough the flour mixture, shake off the excess, and then toss them in the egg wash to coat, and then transfer back into the flour mixture.
Toss the pieces in the hot oil, and cook for 2 minutes on each side. When cooked, place the fried tomatoes in the oven on the wire rack for a few minutes.
Make the sandwiches by slathering the pieces of breads with mayo. Sprinkle with salt and pepper. Top with bacon, lettuce, and the fried green tomatoes. Finish and top with the other slice of bread.
