Description
Enjoy this tart as an appetizer or as a light meal. Serve it with a salad and your meal is complete! It is easy and so tasty, you will have a hard time not eating it before you serve it.
Ingredients
- 2 ripe tomatoes, cut into 1/8-inch slices
- 1 sheet frozen puff pastry
- 3 T. light mayonnaise
- 1/2 c. cheddar cheese, shredded
- 1/2 c. mozzarella cheese, shredded
- 2 T. finely chopped basil
- Parmesan cheese, freshly grated, to taste
- kosher salt, to taste
- freshly ground black pepper, to taste
Steps
- Preheat oven to 400°. Line a baking sheet with parchment paper.
- Place tomato slices on a large sheet of absorbent paper towels. Cover with more paper towels and allow to drain for approximately 30 minutes. This needs to be done to ensure that the tart is not too watery.
- Remove the sheet of puff pastry from the freezer and allow to thaw at room temperature for 30 minutes.
