Make healthy individual breakfast burritos instead of the typical bacon and eggs or breakfast casseroles using turkey bacon, a healthier version of butter, low-fat cheese and whole wheat tortillas! They are filling and delicious!
Ingredients
- 1 1/2 T. butter spread, divided (I Can't Believe It's Not Butter)
- 1/2 c. fresh peppers, tomatoes and green onions, finely chopped
- 2 slices turkey bacon, chopped (or real bacon)
- 2 eggs
- 1 T. water
- 1 T. low- fat cheddar cheese, shredded
- 2- 6 inch. each fajita-size whole wheat tortillas
Steps
- Melt 1 T. butter spread in medium non-stick skillet over medium-high heat. Cook vegetables and bacon, stirring occasionally, until vegetables are tender and bacon is crisp, about 4 minutes.
- Combine eggs and water in small bowl with wire whisk. Add eggs to skillet, stir until eggs are set.
- Remove egg and vegetable mixture from skillet, evenly divide between tortillas. Top with cheese and then roll.
