This dish isn't fancy, but boy is it good. And with such an easy, no fuss clean-up, you will have more time to do the fun things that you want to do!
2 c. instant white or brown rice, uncooked
2 c. warm water
1 lb. flounder fillets, cut crosswise in half, then in half again, to make 4 servings; or any flaky white fish
4 c. tightly packed fresh spinach, coarsely chopped
1/4 c. Chive & Onion Cream Cheese Spread or Chive & Onion 1/3 Less- Fat Cheese Spread
1/2 c. Sun- Dried Tomato Vinaigrette Dressing
Preheat oven to 375°F. Tear 4 large sheets of heavy duty aluminum foil. Spray each with cooking spray.
Combine rice and water then spoon onto centers of the foil pieces. Top each evenly with half of a serving of the fish; cover with 1/4 of the spinach, cream cheese spread and remaining 1/2 serving of the fish. Drizzle with dressing.
Repeat 3 more times.
Fold foil pieces closed; place on rimmed baking sheet.
Bake 15 minutes. Cut slits in foil to release steam before opening packets.
This dish could also be made on a grill or a campfire.
