This recipe might just wind up being one of your weekly go to dinners. It is easy, fast and your family will love it. It is moist on the inside and crunchy on the outside, and on top of that, it has lots of flavor! The best thing, it's baked, not fried!
4 boneless, chicken breasts, skinless
2 T. mayonaise
2 T. parmesan cheese, shredded
1 1/2 t. Paprika
1/2 t. Cumin, ground
1/2 c. Panko bread crumbs
Olive oil mist or cooking spray
salt, to taste
pepper, to taste
Preheat oven to 425 degrees. Spread a baking sheet with parchment paper or foil, spray lightly with olive oil or cooking spray.
Place chicken breasts on the baking sheet.
Combine Paprika, cumin, Parmesan cheese and Panko crumbs together in a small bowl.
Season chicken lightly with salt & pepper. Spread about 1/2 T. mayonaise evenly over the surface of each chicken breast.
Divide seasoned Parmesan cheese and Panko crumb mixture between each chicken breast and sprinkle evenly over each chicken breast. Gently press the panko crumbs into the mayonaise to help them stick. Spray tops of chicken breasts lightly with olive oil or cooking spray.
Place baking sheet in center rack of oven and bake until crust is golden and chicken is cooked through, about 20 to 30 minutes.
