Need a meal in a hurry? Then make these Chicken and Dumplings. They are quick because you use chicken that is already cooked, like left-over chicken from another meal or rotisserie chicken from the supermarket. Chicken and Dumplings- the ultimate comfort
Dumplings:
2 c. self-rising flour
1/4 c. shortening
3/4 c. boiling water
4 c. chopped chicken or turkey, cooked
1 c. chopped celery
1- 10 1/2 oz. can cream of chicken soup
2- 10 1/2 oz. cans chicken broth
3 -10 1/2 cans of water
salt, to taste
pepper, to taste
Place the last 5 ingredients in a soup pot and bring to a boil. Cover.
Dumplings:
Pour 2 cu. self-rising flour into a large bowl, cut in 1/4 cu. shortening with a pastry blender or fork, add 3/4 cu. boiling water a little at a time until you can shape the mixture into a ball. Roll out to about 1/8 inch of thickness on a floured board. Cut into squares.
Remove lid on pot, add several squares at a time to the boiling broth, replacing lid each time for about 30 seconds until you have added all the dumplings. When all dumplings are added, lower heat to simmer for about 20 minutes. Add salt and pepper to taste.
