Make this wonderfully delicious and easy pulled pork for tacos or pulled pork sandwiches. It's easy to just prepare this dish for the crockpot and then let it do all of the work for you!
2-3 lb. pork roast
salt, to taste
pepper, to taste
2 garlic cloves, minced
garlic salt, to taste
water
2 - 12 oz. cans Rootbeer
brown sugar, to taste
enchilada sauce, to taste
1 small can green chilies
Line small crock with a crockpot liner for easy cleanup.
Salt and pepper roast to taste, put roast and garlic in a crock pot, add water to fill half full.
Cook on low for about 5 hours. Remove roast, remove water, and return meat to crock pot.
Add 12 oz. Rootbeer and 1/2 cup of brown sugar (to start off with). Pull apart or cut pork into 3 or 4 chunks.
Let meat cook on low for 3 more hours. Transfer roast and liquid to a large skillet and pull apart. Add green chilies, enchilada sauce, more brown sugar and more Rootbeer. If you want the roast sweeter, add more sugar and Rootbeer. If you want it less sweet, add more enchilada sauce.
Tip: Roast could be browned in a large skillet (the same one you will use later) with a little oil, salt, pepper and garlic salt before cooking it into the crockpot.
