Grilled Parmesan and Shallot Chicken

Description

Add a little surprise and oomph to your grilled chicken with this grilled chicken with a garlicy Parmesan cheese mixed with minced shallot and mayo with olive oil. Serve with veggies and a salad.

Ingredients

1/4 c. Mayonnaise with Olive Oil
2 T. Parmesan cheese, shredded
1/2 shallot, minced
1/2- 1 clove garlic, minced
4 boneless chicken breasts with skin
salt and cracked black pepper

Preheat grill to high.

Mix mayonnaise with olive oil, Parmesan cheese, shallot and garlic. Place 1 tablespoon of this mixture under the skin of each breast. Season breasts with salt and cracked pepper.

Place on grill, skin side down then shut lid of grill. Grill about 5 minutes on each side. Remove from grill when juices are no longer pink. Serve immediately.

This can be made on an indoor grill as well.
