These fruit enchiladas are so delicious, you won't be able to wait till you are finished with dinner to enjoy them for dessert. So, why not have them for breakfast too?
1- 21 oz. can apple pie filling (cherry, peach or any fruit would do)
6- 8 inch flour tortillas
2 t. ground cinnamon
1/2 c. butter
1/2 c. white sugar
1/2 c. brown sugar
1/2 c. water
cinnamon sugar
Preheat oven to 350 degrees.
Spoon one heaping quarter cup of pie filling evenly down the center of each tortilla. Sprinkle with cinnamon; roll up, tucking in edges; and place seam side down in a prepared baking dish.
In a medium saucepan over medium heat, combine butter, white sugar, brown sugar and water. Bring to a boil, stirring constantly; reduce heat and simmer 3 minutes.
Pour sauce over enchiladas and let stand for a full 45 minutes.
Sprinkle with cinnamon sugar. Bake 20 minutes, or until golden brown.
Serve with vanilla ice cream.
