Tuna lovers will love this sandwich. Celery and apples with a lemon basil mayonnaise make this salad special.
12 oz. best quality tuna, packed in oil, drained or if prefered, packed in water
2 stalks celery, washed, cut in half lengthwise, then halves again and thinly chopped
1 apple, McIntosh or Gala, washed, peeled, cored, and cut into 1/4 inch pieces
3 T. light mayonnaise, your favorite
2 T. basil leaves, freshly chopped
1 T. lemon juice, freshly squeezed
salt, to taste
freshly ground pepper, to taste
8 slices good quality sourdough bread
Combine tuna, flake with a fork, celery, apple, mayo, basil, and lemon juice. Mix well. Season with salt and pepper.
Divide tuna salad among 4 slices of sourdough bread and top with remaining 4 slices bread.
Top with lettuce, tomato slices, avocado or cheese slices, if desired.
