Tuna lovers will love this sandwich. Celery and apples with a lemon basil mayonnaise make this salad special.
Ingredients
- 12 oz. best quality tuna, packed in oil, drained or if prefered, packed in water
- 2 stalks celery, washed, cut in half lengthwise, then halves again and thinly chopped
- 1 apple, McIntosh or Gala, washed, peeled, cored, and cut into 1/4 inch pieces
- 3 T. light mayonnaise, your favorite
- 2 T. basil leaves, freshly chopped
- 1 T. lemon juice, freshly squeezed
- salt, to taste
- freshly ground pepper, to taste
- 8 slices good quality sourdough bread
Steps
- Combine tuna, flake with a fork, celery, apple, mayo, basil, and lemon juice. Mix well. Season with salt and pepper.
- Divide tuna salad among 4 slices of sourdough bread and top with remaining 4 slices bread.
- Top with lettuce, tomato slices, avocado or cheese slices, if desired.
