This is a great chicken dish that is like down home cooking and not fancy at all. Serve it with rice or pasta and garlic bread.
2 pkg. chicken breasts, pounded thin
a few slices of prosciutto
1/2 bag fresh spinach
Kosher salt, to taste
coarse black pepper, to taste
8 oz. fresh mushrooms, sliced
1 envelope Lipton Recipe Secret's Savory Herb and Garlic, or a garlic herb seasoning
1/2 c. white wine
1/4 c. olive oil
8 oz. Mozzarella, shredded
Preheat oven to 375 degrees. Spray a 13x9 inch pan with cooking spray. Place 2 layers of chicken in the pan, cover with prosciutto, top with spinach, sprinkle with a little Kosher salt and coarse black pepper,
top with mushrooms.
Whisk olive oil, wine and Savory Herb envelope together, then pour over casserole. Lay a piece of aluminum foil over the mixture loosely.
Bake 30 minutes, top with Mozzarella cheese, bake for 5 more minutes.
