Cuban Sandwiches

Description

No need to go to Miami or Tampa to enjoy a Cuban sandwich when you can make your own at home. Instead of the hard to find Cuban bread, use Italian or Ciabatta bread and the rest of the traditional ingredients. Sometimes salami is included as well.

Ingredients

1 loaf Italian or Ciabatta bread
1/4 c. mayonnaise
8 oz. cooked ham, thinly sliced
8 oz. roasted pork loin, thinly sliced
8 oz. Swiss cheese, thinly sliced
4 Dill pickles, thinly sliced lengthwise
1/4 c. yellow mustard
2 T. unsalted butter, melted

Preheat oven to 200°. Put rack in the middle of the oven.

Cut bread in half horizontally then open it up like a book. Spread the mayo on one piece of bread.

Place the ham and pork on top of the mayo. Arrange the cheese and pickles on the meat.
Spread mustard on the top piece of bread and close the sandwich. Press gently on the top to compact it slightly. Cut it in half crosswise; set both halves aside.

Lay two 20 inch long sheets of foil on a work surface. Brush half of the melted butter on the tops of the sandwiches. Place each sandwich buttered side down on the foil. Brush bottoms with the remaining butter. Fold foil around the sandwiches to completely seal them.

Heat a large frying pan on low heat until hot, about 4 minutes. Place 1 wrapped sandwich in the pan. Place a heavy pot on the sandwich, push down on the pot to further compact it, and cook undisturbed for 10 minutes.

Remove the pot. Flip the sandwich, then place the pot back on the top. Cook undisturbed until the cheese has melted and the sandwich is warmed through, about 10 minutes. Move to the oven and repeat with the second sandwich. When both are ready, remove the foil, cut into pieces, and serve.
