This Thai food inspired recipe will surely impress your family and it is so easy to make. Serve it over your choice of rice for a complete meal.
2 lb. boneless, skinless chicken thigh tenders or chicken breast tenders
1/4 c. all purpose flour
1/2 t. black pepper
1 T. canola oil
1/2 c. soy sauce
4 T. rice wine vinegar
4 T. ketchup
2 T. brown sugar
2 garlic cloves, minced
1 t. grated fresh ginger
1/2 t. red pepper flakes
1 c. cashews
Combine flour and pepper in large ziploc bag then add chicken. Shake to coat with mixture. Heat oil in skillet over medium-high heat, then brown chicken about 2 minutes on each side.
Place slow-cooker liner in crock for easy clean-ip.
Place chicken in slow cooker, then combine soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes in small bowl and pour over chicken. Cook on low for 3-4 hours.
Add cashews and stir. Serve over rice.
