Description
What to do with a value pack of chicken or a whole chicken? Make this tasty and simple roasted chicken in a delicious marinade. Serve with potatoes and a light salad.
Ingredients
- 1 whole chicken, cut into 8 pieces, skin on and bone in
- 4 T. soy sauce
- 2 T. light brown sugar
- 4 T. red wine vinegar
- 6 T. olive oil
- 6 shallots, chopped
- 4 cloves of garlic, minced
- salt, to taste
- pepper, to taste
- fresh parsley, about one handful, chopped for garnish
Steps
- Preheat oven to 425 degrees.
- In a large baking dish, combine marinade ingredients and toss with chicken. Season with salt and pepper. Marinate 30 minutes minumum.
- Place chicken pieces skin side up and roast for 30 minutes until it begins to brown. Remove and baste with marinade. Turn pieces and bake a remaining 10 minutes or until chicken is cooked.
