What to do with a value pack of chicken or a whole chicken? Make this tasty and simple roasted chicken in a delicious marinade. Serve with potatoes and a light salad.
1 whole chicken, cut into 8 pieces, skin on and bone in
4 T. soy sauce
2 T. light brown sugar
4 T. red wine vinegar
6 T. olive oil
6 shallots, chopped
4 cloves of garlic, minced
salt, to taste
pepper, to taste
fresh parsley, about one handful, chopped for garnish
Preheat oven to 425 degrees.
In a large baking dish, combine marinade ingredients and toss with chicken. Season with salt and pepper. Marinate 30 minutes minumum.
Place chicken pieces skin side up and roast for 30 minutes until it begins to brown. Remove and baste with marinade. Turn pieces and bake a remaining 10 minutes or until chicken is cooked.
Garnish with fresh parsley.
