Slow-Cooker Cheeseburger Soup

Description

Want to make an easy meal in the slow-cooker, but you don't have all day to do it? Make this simple, delicious soup in just a little over two hours. Everyone will love it, and if you use a slow-cooker liner, clean up will be easier too!

Ingredients

1 T. olive oil
3 garlic cloves, minced
1 onion, chopped
3 celery ribs, chopped
1 lb. lean ground beef
2 T. all-purpose flour
3 c. chicken stock, divided
1- 12 oz. can evaporated milk
1/2 t. paprika
1/2 t. garlic powder
1 1/2 T. Worchestershire sauce
1 T. yellow mustard
1/4 t. Kosher salt
1/8 t. black pepper
8 oz. cubed cheese, like Velveeta
shredded cheddar cheese for topping, if desired

Line slow cooker with a slow cooker liner for easy clean up.

Heat olive oil in a large skillet over medium-high heat. Add garlic, onion and celery to skillet and cook until tender, about 10 minutes. Remove from skillet and place the vegetables in the bottom of the slow cooker.

In the same pan, brown hamburger. Drain, add meat to the slow cooker.

In a small cup, combine flour and 1/2 cup of stock. Whisk to combine, until it’s smooth and lump-free. Add mixture to the skillet, and slowly pour in the remaining 2 ½ cups of stock. Bring to a boil, stirring constantly, and cook until just thickened. Pour over meat in slow-cooker.

Stir in remaining ingredients, top with the black pepper. Cook on low for 2 hours.

When serving, top with cheese and stir until melted. Top with shredded cheese, if desired.
