Slow-Cooker Apple Cider Pulled Chicken Sandwiches

Description

It's time to get out the slow-cooker and let all of your fall flavors work together in one great dish! Make this delicious, savory with a hint of sweet chicken topped with a salty cheese and use them to make the best pulled chicken sandwich ever!

Ingredients

1 apple, peeled and sliced (Braeburns or Galas work well)
1 large sweet onion, sliced
2 lb. boneless, skinless chicken breasts
1 t. salt
1 t. pepper
1 t. paprika
2 t. dry mustard
12 oz.hard cider
12-16 slices of sourdough or your favorite bread, toasted
8 oz. sharp white cheddar cheese, shredded

Line slow-cooker with a slow-cooker liner for easy clean up.

Place onion and apple slices on the bottom of the slow- cooker. Lay the chicken breasts on top of the apples and onions, and sprinkle on salt, pepper, paprika, and mustard. Pour the hard cider on top.

Cook on low for 6-8 hours, or until chicken shreds easily.

Remove chicken from the slow cooker to a cutting board, shred with two forks, and return to the slow cooker. Toss together the chicken, apples, onions and cooking liquid until evenly distributed.

Top one slice of toasted bread with shredded chicken mixture, sprinkle with shredded cheddar, and top with the other slice of toasted bread.

** You can also butter the bread slices on one side each and grill the sandwich like a grilled cheese!
