An easy way to make warm sandwiches on those cold days!
2 T olive oil
3 lb. beef roast
Kosher salt
fresh ground black pepper
2-1 oz. pkgs. dry onion soup mix
2 c water
2-14.5 oz. cans low sodium beef broth
Provolone or Swiss cheese slices
Crusty buns or Hoagies
Heat oil in pan. Sprinkle salt and pepper on all sides of the meat. Sear meat on all sides and then put it in the crock pot. Sprinkle with the dry onion soup mix. Cook 4-6 hours on high or 8-10 oz. on low setting. You can also cook on high till it boils and then change it to low till done. Shred with two forks. Serve on rolls with cheese. You can toast the rolls/buns in the broiler with the cheese on top and then remove and put the beef on top. Serve with au jus.
