Ingredients

1-14 oz. pkg. Kielbasa, your choice of kind, cut into 1/4 inch rounds
1 green bell pepper, diced
1/2 yellow, red or orange bell pepper, diced
1 yellow, sweet onion, diced
2 large potatoes, washed, peeled and diced
2-3 cloves garlic, minced
3 T. olive oil
salt and pepper, to taste

In a large, heavy-bottomed skillet, brown the sliced Kielbasa for around 5 minutes in 1 T. olive oil over medium-high heat. Remove Kielbasa from the pan and set aside. Add the peppers and onions to the skillet and season with a pinch of salt and pepper. Cook for 4 minutes, or until softened, add in the garlic, cook another minute or so, stirring occasionally. Set aside in a large bowl and cover to keep warm.

In the same skillet, heat 2 T. olive oil over medium-high heat. Add potatoes to the skillet and season with salt and pepper. Fry until golden brown and cooked through, around 8-10 minutes, stirring a few times to ensure even browning. Wait to stir the first time until the potatoes are brown on one side.

Combine the cooked Kielbasa, potatoes, peppers and onions together in the skillet. Stir until combined and all ingredients are heated through. Transfer to the large bowl that was used for the Kielbasa, peppers and onions. Serve warm.
