Simply yummy!
1 lb. large shells
15 oz. fresh ricotta cheese
6 cups Marinara Sauce, homemade or from a jar
1/4 cup Parmesan cheese
salt and pepper to taste
2 T chopped parsley
Cook shells in a large pot of salted boiling water till al dente. While cooking, mix ricotta, 4 cups of the marinara, and the cheese in a medium pan over medium to low heat. Cook and stir constantly, for 4 minutes. Salt and pepper to taste. Turn off heat and cover to keep warm.
Heat remaining marinara in a small pan over low heat.
Drain shells and return them to the pot. Over medium heat, stir in 1/2 cup of the ricotta sauce. Using a wooden spoon, stir till well mixed. Remove from the heat and stir in the remaining ricotta sauce. Put a ladleful of the marinara sauce on top and serve with parsley on top.
