A delicious no meat casserole.
30 oz. frozen spinach, chopped,thawed and moisture squeezed out
1 lb. feta cheese, crumbled
salt and pepper to taste
3 garlic cloves, peeled and minced
2 bunches green onions, washed and chopped
4 eggs, beaten
4 sticks butter, melted
1/2 lb. filo dough or more if preferred
Saute green onions in a little butter and set aside. Drain spinach and place a large mixing bowl. Add sauteed green onions, feta salt and pepper. Slowly fold in eggs into spinach mixture and set aside.
Butter a 9x13 inch baking pan, and one at a time layer about 7 filo sheets in the bottom of the pan, brushing each one with melted butter. Spread the spinach mixture evenly over filo sheets. Top with about 7 more individually buttered filo sheets and thoroughly butter the last filo sheet. Refrigerate about an hour or two and then score into squares with the tip of a sharp knife. Don't cut all the way down. Bake in a 350 degree preheated oven about 1 hour or until a light golden color. Don't cover while cooking or it will get soggy.
Place on a wire rack to cool and cut into squares before serving.
