Chicken kabobs the Greek way!
2 cloves garlic, peeled
1 avocado, halved seeded and peeled
6 oz. fat-free plain Greek yogurt
2 t. fresh lemon juice
1/4 t salt
1 lb. chicken tenders
wooden skewers, soaked in water for 30 minutes
2 t. Greek seasoning
1/4 t. garlic powder
1/4 t. onion powder
Soak wooden skewers in water for 30 minutes. Put steel knife blade on food processor and while machine is running, drop garlic in through feed tube and process till chopped. Add avocado, yogurt, lemon juice and salt; process till smooth. Place in bowl; cover and chill several hours or overnight to develop flavors. Remove tendons from chicken. Weave 1 chicken tender onto each skewer. In small bowl, combine Greek seasoning, garlic powder, and onion powder. Sprinkle all over chicken. Put skewers on oiled grid on medium high heat, cover and grill until cooked through and nicely browned, about 5 minutes. Serve with avocado sauce.
