This recipe is much easier to make than stuffed peppers and just as good. If needed, this dish can be made in a slow cooker.
2 lb. ground turkey or lean beef
1 qt. water
1 box beef stock
1-28 oz. can tomato sauce
1-28 oz. can diced tomatoes with Italian seasonings, undrained
2 c. cooked long grain rice
2 c. chopped green peppers
1/4 c. packed brown sugar
2 t. salt
2 t. beef bouillon granules
1 t. pepper
garlic powder, to taste
In a Dutch oven, cook meat over medium heat until no longer pink; drain. Stir in the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 30-40 minutes or until peppers are tender.
10 servings (2-1/2 quarts)
