Make your mouth water with a tender chicken stuffed with a green onion cream cheese spread wrapped in bacon! Not only is it delicious and easy, but it is low-carb too!
1 boneless skinless chicken breast
2 T. cream cheese
1 1/2 T. green onion, chopped (or diced jalapenos)
1-2 T. chopped parsley
garlic powder, to taste
2 pieces bacon, partially cooked
Preheat oven to 375 degrees. Spray non-stick cooking spray on a baking sheet.
Pound out chicken breast so it is about 1/4 inch thick.
Mix together cream cheese, green onions, parsley and then spread cheese mixture over 1 side of chicken breast. Sprinkle on garlic powder, to taste.
Roll chicken breast up to cover cream cheese. Wrap partially cooked bacon around chicken breast and secure with toothpick.
Place on baking sheet and sprinkle on a little more garlic powder, if desired.
Bake about 30 minutes, then broil for about 5 minute to crisp the bacon.
