2 lb. fresh lean ground beef
1 medium-large onion, chopped
1/2 c. diced celery
1/4 c. diced green bell pepper
1 qt. tomato juice
1- 15 can tomato purée
1- 15 oz. can red kidney beans, drained
1- 15 oz. can pinto beans, drained
1/4 c. chili powder (use less for milder chili)
1 t. ground cumin (use more for real flavor)
1 1/2 t. garlic powder
1 t. salt
1/2 t. ground black pepper
1/2 t. dried oregano
1/2 t. sugar
1/8 t. cayenne pepper
In a large Dutch oven, brown the ground beef, onion, celery, and green pepper.
Drain off the fat. Add the remaining ingredients . Cover the pot and let the chili simmer for 1 to 1 1/2 hours, stirring every 15 minutes.
