This is the perfect soup for a large crowd. It is filling and delicious. It's great for Christmas Eve or another special time when you want a dish that feeds a lot and is all in one pot. Keep it warm in a crock pot on low, if you wish.
12 bacon slices
1 1/3 c. butter
1 1/3 c. flour
14 c. milk
8 large potatoes, baked, peeled and cubed
8 green onions, chopped
2 1/2 c. Cheddar cheese, shredded
2 c. sour cream
2 t. salt
2 t. pepper
Bake potatoes, either in the microwave or the oven.
Cook bacon, in a large, deep skillet or in the oven on a rimmed baking pan till brown.
In a Dutch oven, melt butter over medium heat. Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened.Stir in potatoes and onions. Bring to a boil, stirring frequently.
Reduce heat and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt and pepper. Continue cooking, stirring frequently, until cheese is melted.
Makes 12 servings
(To make it a little healthier, use reduced fat cheese, reduced fat sour cream and skim milk.)
