Description
This great dish can be a meal because it is filling as well as delicious, but it can also make a great side dish as well.
Ingredients
- 1/2 head cauliflower (6-7 inch diameter)
- 1 c. reduced-fat shredded Cheddar cheese
- 1 T. chopped chives
- 1/2 t. black pepper
- 1 T. salted butter
- 1/4 c. plain low-fat yogurt
- 2 T. bacon bits
- 1 t. minced garlic
- 1/4 c. reduced-fat sour cream
Steps
- Cook cauliflower until tender (Microwave and cover with NO water added for approximately 6 minutes on high).
- Preheat oven to 400 degrees.
- Process cauliflower until smooth with a food processor. Add yogurt, sour cream, and butter and process until creamy and smooth. (Squeeze moisture out of cauliflower with a kitchen towel or cheese cloth so that it's more the consistency of potatoes before mixing.)
