Fritos Huevos Rancheros

Description

Make these tasty Mexican eggs for breakfast or brunch and add more flavor and crunch with Fritos. Make it even more exciting with other Fritos like the Chili Cheese or Ranch varieties!

Ingredients

4 c. frozen potatoes, like Ore Ida Potatoes O'Brien
1 lb. bacon, baked in the oven at 400 degrees for 15 minutes or on the stove, and chopped into bite-sized pieces
black beans, 2-14 oz. cans, drained and rinsed well
2 - 3 c. green chile sauce, red chile sauce, or salsa
1 1/2 c. shredded cheese
kosher salt, to taste
freshly ground black pepper, to taste
6 eggs
3 - 4 c. Fritos corn chips, your choice of flavor

Cook potatoes according to package directions, then cook bacon. (Or, fry bacon, remove to a plate lined with paper towels) and then cook the potatoes in the same pan in the bacon grease.)

Stir together the beans with 1 cup of chile sauce and heat in a small saucepan or a glass bowl in the microwave. When bacon is finished cooking, drain it on a paper towel lined plate and then cut it into bite-sized pieces. Cook eggs to the level of doneness that you prefer. Season with salt and pepper.

Place a handful of chips on a plate, top with black beans, potatoes, cheese. Warm in the microwave for about 30 seconds, just until the cheese has melted. (You can also melt the cheese in the oven, if your plates are oven-safe.) Top with an egg and as much more chile sauce as you like.
