This casserole is so quick and easy to make, you can make it and have it on the table in less than an hour. The family will beg you to make it every week!
1 lb. lean ground beef
1 can condensed tomato soup
1 c. thick and chunky salsa
½ c. milk
6 flour or corn tortillas torn into 1 inch pieces
1 c. shredded Mexican cheese
optional- sour cream
optional- green onion, chopped
Preheat oven to 400 degrees.
In a skillet over medium heat, cook beef until brown, then drain fat.
Add soup, salsa, milk, tortillas and half of the cheese. Mix, then spoon into 2 qt. baking dish that has been sprayed with non-stick cooking spray. Cover.
Bake for 30 minutes or until hot. Uncover and sprinkle with remaining cheese.
Serve with sour cream and green onions on top.
